After a decade-long wait, Eastbridge Town Center is moving toward reality, with opening projected for fall 2016. Chef Troy Guard (and Stapleton resident) is the first tenant to come on board, anchoring the center with two restaurants: his second Los Chingones Mexican restaurant (the first is downtown), which will have a rooftop patio, and a yet-unnamed breakfast/brunch place.
Plans for the plaza include a fire pit on the west end, where some of the nighttime restaurants will be and maybe a water feature on the east end where more of the daytime businesses will be, according to Tyler Carlson of Evergreen Development.
Evergreen has partnered with City Street Investors, whose principals have been associated with Larimer Associates. City Street is finding tenants and managing the leasing. Additional restaurants will include a coffee shop, an Asian-focused restaurant and lunchtime soup and sandwich place, and boutique retailers.
