New Stanley Brewery Celebrates Mexican Roots

Lowry residents Javier Pérez Koch and Jennifer Pérez will open Casita Brewing Company in the Stanley Marketplace next year. The production facility and public taproom will occupy a 3,000-square-foot multilevel space, with seating outside as well.

Casita will be “fusion-focused,” meaning its beers incorporate flavors from all over the world. “We draw inspiration from our Mexican roots,” said Javier, who started brewing in the couple’s kitchen. “Most people know about the Mexican beers that are German, like Pacifico and Dos Equis. But Mexico was also colonized by other countries. We make cool and different beers with spices from China, tropical fruits, chocolate, coffee and other flavors.”

The couple chose the Stanley for its location. “We love this area because it’s not already flush with breweries—but replete with beer lovers,” Javier said.

Casita will sponsor athletic teams, including a running club and a disc golf club. The couple plans to donate a portion of sales to help the community.
